Cuisine of the month:
I use rice vinegar instead of citrus and add in some honey/sugar. Also add back the msg if the gochujang doesn't have it (a lot of the stuff sold here doesn't have msg, I always have to sift through brands to find one that does)
Can also add ketchup as well, but it works p well either way
The flavour does vary a lot from brand to brand; I generally prefer the less sweet ones.
Yeah gochujang+mayo is phenomenal and game changing

I didn't have aleppo pepper but I made do. This is really close to the hummus recipe I like to make, sans olive oil. It was so good with fries, thanks for the recommendation!

I came here to say this. I mix it with ketchup though.
In the Netherlands and Belgium they just have a sauce menu and you can order whatever sauce you like and it's great.

Mayonnaise should be illegal
Some mayo, some ketchup, maybe some yellow mustard, a dash of sriracha, and that's a nice fry sauce.
Fries in homemade mayo is pretty fuckin good. Homemade mayo in general is pretty fuckin good.
It's especially nice when the fries are seasoned a little extra. The CONTRASTS.
At home, I have my fries with a little bit of mayo mixed with some hot sauce and a pinch of MSG and black pepper

besides plain mustard or vinegar i can't think of many dips without commiserate fat & calories, tbh.
Vinegar is nice to cut through fatty foods. But why mix the vinegar like 1:10 with oil, that kinda defeats the purpose?
Though I'm biased, I'm from the mayo-hating part of Germany, which is less based than it sounds.
Mayonnaise is good with fries if you want something creamy. I'd just go with straight up salt and vinegar instead of increasing the ratio of vinegar to fat.

I'm more of a Sriracha guy, but I might try this with some vegan mayo.
I mix Sriracha and vegan mayo and it tastes like a superior buffalo sauce

Mayo is fat/protein from eggs and plant fats with acid and salt. If you know cooking, this is a very good combo. But mayo my itself needs some spicing up, and you can add just about anything.
Garlic, Siracha, Smoked Paprika, etc. are all good. Just mix em in with a spoon
French fries with Pique, Puerto Rican hot sauce made by steeping chiles in vinegar, is fucking goated. Mixing hot sauce with mayo and mustard, or adding lemon juice to ketchup is good too. Malt vinegar is good as well. Vinegar based hot sauces though are peak when it comes to french fry accoutrements
