Speaking only for myself, I only do this if I think there's some risk that I'll whallop my head on the lintel, placing my hand on the lintel helps my body figure out if it needs to duck or not.

I'm 5'11" and have never once felt any overwhelming desire to touch the top of a doorframe as I walk through it lol I didn't realize that was a thing people do
