I wonder what a true stereotypical Canadian pizza would have? Poutine? Maple syrup? Pickled cheese?

NGL Poutine sounds like a good fit for pizza

Use a potato dough for the flour, gravey for sause, and the right cheese

They are not good.

Maybe if places actually used potato dough it would better.

I’ve seen either pizza dough, gravy, cheese curds + optional meat(bacon or donair usually) or what’s essentially a poutine dumped onto pizza dough, so fries, curds and gravy.

I’ve seen people eat them. That’s the best review I can give.

Isn't the whole thing about poutine that it looks like kinda off-putting slop of random stuff but tastes amazing?

We do have pizza with spaghetti on it. You've got the Québecois to thank for that one. And yes, before you ask, it's called pizzaghetti.
