Emulating PSX games on it. It was a great emulation machine at that time.
Playing jRPGs. This was where the Trails in the Sky series first came out in English, years before the PC. I loved that game, still do. Spent hours playing this game under the blanket of my bed. Also Persona 3.

Sims 2, Twisted Metal: Head On, and Ape Escape Academy. I can still hear the music from those games and it always brings a smile to my face.
I mean…my nostalgia is for the Vita, since all was backwards compatible, but same thing.
I loved Uncharted Golden Abyss, and Tearaway. I heard the latter was ported, but there’s a number of device features they could never replicate.
Bumped for Vita love. Tearaway was FUCKING insane, the PS4 has the touchpad so it can get close but it's not as seamless as the Vita did it. Another game that fits this bill is Gravity Rush. That game is amazing.
I remember the Vita from my middle school days, I played Black Ops Declassified online all the time. Played first season of Walking Dead on there and just remembering crying at 5 in the morning after that ending. Also used it to watch all my nsfw shit until I got a phone. Good times
I put hours and hours into Valkyria Chronicles 2. I know a lot of people don't like the entry, but I had a blast.
I played so much Metal Gear Acid. when you get your deck tweaked just right and start cranking out the perfect combos it was so satisfying

I remember playing FF Dissidia pvp with my friends after school or at lunch. Good times
I got one when I was 18, I think it was around the time it was first hacked using Liberty City Stories.
I used it almost purely as a retro gaming device...I don't think I owned a single psp game other than LCS!. The GBA emulator was stupidly good. I also used it to listen to web radio and watch TV (I remember I used to watch 24 on it at uni the day after it aired each week). The 4gb memory card cost me £150! Being able to play any PS1 game on it via cfw was also great.
It was a fantastic device, but in terms of actual games made for it, it didn't have much of an impression on me. The Vita did though - that introduced me to Dangaronpa, brought me back into Ys, etc....so many classics.
I need to get into PSP's library really, I have a steam deck which is perfect for it.
Star Wars Battlefront!!
Ace Combat X, it was my first game of the series and got me hooked. It's too bad the branching story paths aren't really a thing in the other games except AC3 (the best entry in the series imo)
Nowadays my psp is sadly broken, the screen is showing it's individual pixel lines with some offset or something, but hey emulation is really easy
Metal Gear Solid: Peacewalker is a masterpiece of a PSP game.
The one that I played the most of was Baito Hell 2000 / Work Time Fun. A weird almost Warioware style game, but instead of microgames that you played for 2 seconds, it was a job. Some of them were boring as hell, like capping pens at a pen factory, or sorting male and female chicks, but there was just something about it, where you got into a rhythm and just went. I could go for hours, capping pens while watching something on the TV I didn't need to pay too much attention to, or retrieving golf balls, or some other weird mini game.
I still have my PSP, and I'll still pull it out from time to time, just to play this game.

I haven’t seen anyone mention Metal Gear Acid yet. Not sure how it held up but it was pretty memorable for me.
OG Puzzle Quest changed my entire world.
Patapon, LocoRoco, Crush, and all the NES/SNES/Genisis games.
