I should say bun cha inspired since it's not 100% authentic, but I like how it turned out!

I absolutely love pho, but when I went to Vietnam I ate Bun Cha constantly. Soooo good.

I kind of eyeballed it all, but it was ground pork, finely minced lemon grass, a bit of brown sugar, finely diced shallot, minced garlic, and a little fish sauce. The nuoc cham was water, fish sauce, sugar, like juice, and Thai chiles. All served on top of rice noodles with herbs and sliced cucumber on the side. I didn't end up making the pickled veggies.

There's some fish sauce in the meatballs, and I had nuoc cham on the side. Plenty of fish sauce!
