I'm really interested in the Professor Oak Challenge subsets for the Pokemon games, but my favourite set I've seen was Kingdom Hearts: Chain of Memories [GBA], since it gives each boss a really good challenge achievement. Things like limiting the attacks you can do, types of attacks you can do, if you can move. It's really interesting (and difficult!)
RetroAchievements
This community is unofficial. Let me know if a developer of RetroAchievements wishes to have a Lemmy community.
RetroAchievements is a service that adds achievements to old games! From Gameboy to PlayStation 2 to the TurboGrafx-CD, regular and challenge achievement sets are available across myriad games and game hacks.
The achievement system is baked into specific emulators, and requires nothing more than the proper ROM or ISO and your user credentials to start earning.
It's got to be the one for Super Mario World. It's just so nostalgic and brings back so many memories from my childhood. The achievements are really well thought out and add a new level of challenge to the game. I can't recommend it enough!
Does it encourage you to play in alternative ways? I think there's some achievement for Super Mario Bros involving only jumping a minimum number of times per level for example.
The Mini Mario vs the World achievements definitely makes you play different, forcing you to dodge certain items and power ups as you play through and beat various parts of the game!

Reminds me of the Communist Mario ROM hack where you die if you get any coins.
Those were so fun. Did you do the Starman challenge? I'm still working on it
Do you mind explaining what that is?
I’ve really been enjoying Pokémon Platinum’s set. It’s surprisingly challenging and getting me to engage with mechanics that I never would’ve otherwise, or didn’t even know existed.
