The difference is that created/modified/accessed timestamps are stored in the filesystem, for every file, while the info you want lies within the data of certain file types. You would need an extension/plugin to teach Dolphin how to recognize those file types, extract the info, and display it.
I think Thunar (the Xfce file manager) can do this, but I don't know if such a thing exists for Dolphin.
