Ooh yeah definitely the balsamic. You can let it marinate in the balsamic and seasoning overnight in the fridge.
Yeah. Then add the oil later because in my experience, it it gets too cold it'll solidify.
You can add potatoes too if you want to make a potato salad without any mayonnaise. You can always substitute balsamic vinegar with a bit of lemon juice if you feel like it. I did that once with some scraps of leftover boiled potato and it turned out pretty good. Especially with a bit of oregano.
