Open plans are definitely way less inclusive of people with more sensitive senses for sure

I wonder if companies started adapting open floor plans partially to filter out people who can't thrive in them

I.e. people on the spectrum and less social people

Quite possible.

Some people do fine with constant annoying little distractions at all times. Those are the kind of people that corporate culture wants to have around because it all amounts to annoying little distractions and seeking validation for them.
