Joke aside, the reason why you'll see so many french content on peertube is that it's development funded by Framasoft a large french no profit. Giving it a larger audience in the Francosphere, at a point a couple of medium youtuber do have mirror on peertube, and a couple of official institution moved to Peertube.
Then define normal content you won't find large youtuber, there isn't an easy way to make much money from ads. However, if you look for Blender tutorials , someone repairing a guitar pedal some cycling in Germany or some electronic music mix session OK that one is almost french you can find-it
