Yeah, you can ‘select all’ with LB I think, then the colour changes apply to your whole ship.
Double click any part within ship builder, which will highlight the entire ship in red. Then I believe the default key (J) will show up in the bottom as "Color (J)" if memory serves. I think if you move the mouse after clicking the option won't appear.
