Bloomers, loafs, flatbreads, rye breads, wheat breads, sourdough breads, yeast breads - all fermented breads are welcome! Vienesse pastries like croissants are also welcome because technically they're breads too.

Did you open bake? Maybe try the dutch oven method to trap in some moisture. I find that to be the most consistent way since ovens are all different.
