I recommend you installing Arch Linux, their packages are very clean, and I always had no issues changing many things from core packages to use another kind of package. It makes a clean install, you just need to not be afraid to read a terminal (which will help you to understand even more how Linux works), they have a well explained wiki explaining how to do almost everything you need.
To install it, you just need to run that LiveOS and use a command called 'arch-install' and it will ask you a few questions, check them before installing, so you can understand what is each option, and I recommend you using KDE desktop environment.
If you read https://wiki.archlinux.org/title/KDE you will understand how to fit it to your needs.
For wine: https://wiki.archlinux.org/title/Bottles Makes it all easier.
