I've had access to all the add-ons since a few months already using fennec and it's been like that for years. It's a not hard to setup but I have done it a long time ago so I don't remember exactly how. You need to make a Firefox account. Go to your account and create a list of the addons you want to use. Copy some Kind of ID ( I think account ID) and put it somewhere in fennec. Just follow a guide.
It's called collections. You're right that it's not that hard, but it's also a lot more steps than many people are willing to follow, some of them pretty unintuitive. For example, you have to force it to show you addons that are "only" available on desktop, which is not even mentioned in their official guide that I linked above.
Seeing how Firefox usage numbers have plummeted to only a few percent, I am pretty sure most people that use it are tech savvy enough to do it. The regular layman's will certainly use a chromium based browser as their default like how basically my entire family does.

Firefox usage numbers are low globally, but not everywhere. E.g. in Germany, its market share is still above 10%. This includes many people without any tech background.
